The locals in Veneto, Italy, where Prosecco is produced, refer to Prosecco as, “Welcome wine.” I like that. I’m a huge advocate for sparkling wines and believe all celebrations and get togethers should include sparkling wine. I know would welcome a glass of Prosecco when someone welcomes me to an event.

One of the things that distinguishes Prosecco from other sparkling wines is the charmat production method. This is a process of carbonating the wines by adding sugar and yeast to a still wine while enclosed in a steel tank. The fermentation generates carbon dioxide gases that pressurize the tank, forcing the carbon dioxide into the wine and thus creating the bubbles that makes sparkling wine sparkle. This differs from the traditional method, where this process takes place in the bottle versus a tank.

If I had one criticism of the charmat method it would be that wine made this way sometimes isn’t as bubbly as I’d prefer. However, Pasqua leaves the wine under pressure in the tank for 60 days versus the typical 30 days. This results in smaller, more persistent bubbles — which makes the wine seem more bubbly.

Another unique thing about Prosecco is it’s made from Glera grapes, which are mainly grown in the Veneto region.

I like the aromas on this wine, which are like a bouquet of lemon, almond, hay and a hint of banana.The palate brings crisp lemon and granny smith apple flavors, with good acidity and a decent bubbliness. I really like the salinity on the finish, which makes me crave some fresh oysters or fried calamari with this wine.
